fig & prosciutto sandwiches



One baguette, cut lengthwise in half.


1/2 cup fresh cut basil or arugula & 4 oz. thinly sliced prosciutto.
* 8 oz. sweet gorgonzola, goat, or saga blue cheese.




3 ripe purple or green figs, or fig spread.
* 2 tbl. fresh lemon juice.

1. Preheat oven to 350.
2. Mix the oil and basil in a small bowl and drizzle evenly over both bread halves.
3. Arrange the prosciutto evenly over the bottom half of the bread.
4. Gently spread the cheese over the prosciutto and top the cheese with sliced figs.
5. Sprinkle with the lemon juice and black pepper.
6. Bake until the cheese is melted and the sandwich is heated through, about 15 minutes.
7. Wrap in brown parcel paper, tie with string.
8. Picnic.
